If you want to hide or remove certain Expense Categories from users' selection options, you will first need to go to 'Manage Lists' located on the left side of your company's homepage.

Once open, click on the 'Expense Categories' tab, from here you can use the 'Visible' column to toggle Expense Categories 'On' or 'Off' depending on if you would like them visible or not.

The blue trash can icon can also be used to remove the Expense Category completely.
